Vegan Carrot Bolognese

This one is for all my meat lovers who are making the courageous decision to forego meat for 10 days to do the Bellacor Clean & Lean Detox. I was intrigued when one such carnivorous friend told me her husband came up with a vegan, detox friendly recipe that satisfied her meat craving, so I had to give it a shot. And I must say, it did not disappoint! So if you want to spice up your vegetables with a new, savory flavor that's also good for your body, I suggest you try this one out!


Vegan Carrot Bolognese

Ingredients:

  • 1 large carrot, peeled & diced

  • 2 medium sized stalks of celery, diced

  • 1 small yellow onion, diced

  • 4 cloves of garlic, diced

  • 4oz baby bella mushrooms, diced

  • 2 tbsp olive oil

  • 1/4 cup red wine vinegar

  • 1/4 cup apple cider vinegar

  • 1/2 tbsp balsamic vinegar

  • 3oz tomato paste

  • 2 8oz cans of tomato sauce

  • 2 tbsp lemon juice

  • Salt to taste

  • Spice blend:

  • 1 tsp paprika

  • 1 tsp fennel seed

  • 1 tsp celery salt

  • 1/2 tsp smoked paprika

  • 2 tsp black pepper

  • 2 tsp basil

  • 1 tsp rosemary

  • 2 tsp oregano

Instructions:

In a large pan over medium heat, sauté the olive oil, garlic, and onion until the onion browns slightly. Add the carrot, celery, and about half of the spice blend, mix and let cook for about 3 minutes.


Drizzle a little more olive oil, add salt to taste, then add all 3 vinegars and mix. Next add the mushrooms, more salt, and the rest of the spice blend. Cover and cook for about 3 minutes.


Turn the stove to low heat to add the tomato paste, tomato sauce, and lemon juice. Mix, cover, and simmer for about 10-15 minutes. Serve over veggies or veggie noodles for a delicious detox-compliant meal!
